Knowing there is a rock….a foundation that at the end of the day,
the week,
the month,
the year,
no matter what,
our Father in Heaven, UNFAILING, loves and cares for you and someone we can trust in.
Nine months to go before, “The Hobbit:An Unexpected Journey” 1 will be realsed, so until then….there are the snippets from the trailer and the occasional news that pop up.
It would be interesting to see the new actors(tresses) that have been cast and the return of familiar faces such as Gandalf (my favorite and the actor who plays him; WOW, he does a fantastic job; he captures Gandalf’s qualities perfectly) and of course, Bilbo Baggins, but who can (and shouldn’t), forget, Gollum and “his precious”.
While looking via Pinterst, I stumbled on my favorite quote from the movie trilogy and it had me wistfully thinking, time to pull out the movies (again), make some popcorn and watch the entire series again.

Unfortunately, I don’t have the entire book series, and its something that is on my wishlist, so who knows, maybe this Christmas or for my birthday, I will get the full set, but until then, we have the movies to watch.

I don’t know about you, but I am addicted to Pinterest.
Its a wonderful, photo collage of photos that, as those who are “Pinners” go through the internet or even follow each other, share not only just photos, but a lot of great recipes.

What got you started?
With winter around the corner, it was hard not to think about my favorite comfort food. You know, the food that you absolutely have to have, to just, well, feel comforted, be it due to homesickness, pregnancy craving, having a blue day, or well, just in the mood for food that you are longing for.
So here’s my top ten favorite comfort food that I enjoy and hopefully, I will hear from you as well.

10. Fried Okra
Yes, its fried, and I don’t know if its a southern thing, but lately, I’ve been
craving fried okra. It’s definitely an acquired taste and now thinking about okra, it tastes just as good in gumbo, particularly seafood gumbo.

9. Fried Tostones
Another thing fried….and don’t worry, not a pattern, but fried tostones, is something that my husband, actually was the one to introduce me. At one
time, he lived and surfed in Puerto Rico, and he would tell me how they would get plaintains, slice them up, mash them, fry them and in our case, sprinkle sea salt on them.
They are especially great with number 8. of my favorite comfort food, grilled shrimp.

8. Grilled Shrimp on top of Mango Salsa with wild rice on the side and sauteed vegetables
My mouth is just watering thinking about this dish and its actually
a specialty of hubby. He and I, both love to cook, so we trade off cooking duties, and I have to say, he cooks way much better than I can, so I don’t complain when he offers to cook dinner for the night.
In this case, there is no beating, this particularly dish. He would marinade the shrimp in a garlic butter mix and then after, afixing them to bamboo skewers, cook them on the grill.
In the meantime, we would make mango salsa, that we would lay the grill shrimp (still on the bamboo skewers), wild rice, tostones, and sauteed vegetables.
A meal that is tropical, delicious and an all time favorite.

7. Mexican Hot Chocolate
With winter around the corner, maybe just a quiet Friday/Saturday night, wind rustling outside, the temperatures dropping and….oh who am I kidding,
anytime is a good time for Mexican hot chocolate and what sets this apart for me, is the richness of the drink that doesn’t seem to compare with anything else that I’ve tasted….well….except maybe chai tea.
It uses a “sweet chocolate” that is different from the chocolate that we are more accustomed to and for some, chili powder, yes chili powder is added to this wonderful, yummy, scrumptious drink.
Soy milk may work but for myself, I like whole milk.

6. Grilled Salmon or Red Snapper
Fish thrown on the grill. Yum.
Throw some slices of lemon…add fresh picked herbs…wrap some veggies in aluminum foil and grill alongside…wild rice or steam rice is a main staple in the
home, but usually with seafood, and especially fish, wild rice is made that night.
Add some fresh yeast rolls.
Yum.
5. Sushi
Being pregnant, eating sushi right now isn’t an option, though I’m thinking, California rolls, shouldn’t be an issue and vegetable rolls?
4. Chili
Yes…chili. Seriously.
Grab some crackers, grab a bowl, hang out with hubby while he’s playing his video games, or we’re watching a movie, or if the weather is cooler, he and I and the kids, will hang out in the back, and just enjoy the nicer weather, while eating a warm bowl of chili.
Chili really varies with regions, what is in it and truthfully, chili is more of my hubby’s specialty, than mine, so I don’t have a specific recipe to share, but I can say, that the kind we make, doesn’t have the beans.
3. Fruits
Mangoes, bananas, strawberries, pineapple, grapefruit, peach, plums, plumcot, you name it, fruits are one of my favorite comfort food.
Eat them individually or make an impromptu fruit salad, they are quick to access, easy to eat, can be portable, healthy and just yummy.
When coconuts are in season, I like to mix coconut shavings in the fruit salad and then spray it with fresh squeezed orange juice and there you go….fruit salad comfort food that is also healthy.
2. Anything Chocolate
I’m a girl. A female. And we’re talking chocolate. So how can chocolate, NOT be comfort food.
1. Bread Pudding
Break out the choir….my number one, favorite, all time favorite, is bread pudding. Its definitely an acquire taste for some, but for those who do like it, this is great comfort food to make for cold wintery nights, for summer nights, for fall nights, for spring nights….for just because nights.
There are varying recipes and though I’ve been told that brandy adds flavor to the bread pudding sauce and the New Orlean recipes I have seen, have brandy, the recipe I use (will post tomorrow, since I’m actually going to be making bread pudding today), is a non-alcoholic recipe.
I’m also not a big fan of raisins in the bread pudding, its both a sensory thing (not crazy about having to pick raisins out of my teeth), plus I like raisins, alone, but not really in anything I bake, though I have add it, for those who prefer raisins in their bread pudding and then make a non-raisin bread pudding on the side.
For the sauce that I pour on the bread pudding, I like it where it has a thicker, pudding texture to it, that isn’t thick like pudding….creamy, that’s the word…a creamy, bread pudding sauce.

It’s time to just relax….wind down…the week is over with and the weekend is starting…so to start the weekend with a smile…hear is a video of overwhelming cuteness….
I haven’t abandoned drinking coffee, but after finally able to get a key ingredient needed, cream, I couldn’t resist trying out this recipe I found over at, Confession of a Tart, for Strawberry Scones.
What captured my attention about this recipe, was the fact that it was:
1. Filled with strawberries,
2. Easy to make
3. Easy to make.
Okay that’s really two reasons, but after trying out this recipe, you’ll find yourself emphasizing how easy and wonderful this recipe is to make.
Naturally, after making this, I couldn’t see having a cup of coffee with the scones, so I actually brewed a cup of black tea with a little cream and sugar, and wow wow…what a great afternoon break did it make.
Making this recipe, I took a little liberty with the recipe such as, cutting the strawberries into tiny pieces, which when it comes time to actually kneading the dough, I found that it, made the process much easier and there was less squished strawberries in the process.
The biggest regret was that I have a Kodak, Easyshare Z1285 camera, that is basically, point and click, and when it comes to close ups…well….I found my own eyes crossing looking at the viewfinder, so have to apologize ahead of time for the photo qualities.
Now on to the making of the scones.
First of all, cut up the strawberries, and I recommend in small pieces and not just quartered, plus they are easier to store and if later on, you want to make a smoothie, throw it on top of a smoothie, eat alone, throw at people, juggle (okay, when cut very small, its not easy to juggle so nevermind the juggling part), the smaller pieces work much better.
Mix the ingredients per the instructions from, Confessions of a Tart and when you have the strawberries in the bowl, gently, fold them over, it doesn’t take much and you’ll find why the smaller pieces are so much easier to work with.

Kneading the dough into form
Then it comes time to knead the dough on a flour surface.

I discovered that it doesn’t take much to knead this into form and it helps to go slowly and very very very gently.
I would say maybe knead the dough, to make sure all the dry ingredients are combined, about six times. If it feels a little dry, open a small hole in the center and pour a little bit of cream….not a lot, but a little bit.
The “fun” part, and this is my first time, was getting the scones the right thickness, and in retrospect, I think, I might have made the scones a little thicker than they should have been, but they were still all consumed without a complaint at the end.
When you form the “round circle”, it will look roughly like the photo, I’ve enclosed.

Ready to bake
Cooked it to what you know see…..the final product. The scones were baked at 400 degrees for ten minutes and then I sprinkled a little bit of sugar on top and place the scones, back in the oven, for another ten minutes, while checking to make sure they were lightly golden brown and if they sprung back, when touched, they were ready to come out.

In case you are wondering about the taste…this was my first time making and tasting a scone, so just going from what I made and doesn’t reflect any other scones, but this was a very subtle sweet taste, due to the sugar, sprinkled lightly during the last ten minutes of baking.
I like that it is basically, a biscuit, so if you want sweeter, I would probrably suggest adding more than 1 1/2 tablespoons of sugar (I posted the link to the original recipe, due to not knowing if I could repost the recipe here), but for me…the 1 1/2 tablespoons of sugar was enough.
With this recipe too, I’m thinking one can substitute other fruits then strawberries, particularly if you are allergic to strawberries, but if you do a search online, you’ll find this and many other recipes that you can make just as easy.
For me, this was perfect and best part (and highly recommend), to double the recipe when initially making and then chilling the rest in case of unexpected company, late night snack cravings, or just wanting to make a habit of having afternoon tea with scones.
I wish my scones came out even close to being half as pretty as the Strawberry Scones that, Confession of a Tart, made, but this is my first time at it and it was still fun and great!

I’m determined to get organized, despite the laughter I hear around me and get my schedules, emails, writing schedule, reviewing schedule, the dog, all in order. Okay…maybe I’m just happy I can get my emails at all.
Lately, I’ve been reading,Sidetracked Home Executives(TM): From Pigpen to Paradise by Pam Young and Peggy Jones, who came up with the “S.H.E.” and back in October 2010 (wow, can you believe that 2010 disappear that fast), I saw how Mama Jenn of “Mama Jenn” shared her “S.H.E.” system and even the cute cards that she had made for it.
This inspired me to eventually get the book.
(Yes, I’m that bad at procastination).
Eventually over at Conservative Homeschooler-Raising a Generation for Christ, an online homeschool community, there was a lot of discussions there about the “Side Tracked Home Executives” and the “box” as it came to be known and I was lucky to find a copy of the book,Sidetracked Home Executives(TM): From Pigpen to Paradise.
If you want to see a great setup of the “S.H.E.” system, over at Mom blog network, “ConvientlySimply” shared how her system is set up, or you can drop by and read the discussion, “What is S.H.E.” to learn more about it and see how others have used and made the system.
I need to get organize…I just gotta…to keep up with well…everything. It would be nice to pre-plan and not have to panic at the last minute.
I’ve gone so far of, after Outlook wiping out my emails, in persisting to find an email/calendar/brain to help me keep track of book reviews, memes, blog postings, coffee breaks and more.

So we’re all sitting here, watching the news and waiting to see if the inevitable will happen…snow.
Currently the forecast is calling for maybe an inch to 3 inches of snow and for our area, snow is a pretty big event and novelty, since it’s not the norm, at any time, to expect snow.
The downside too, is the fact that if we do get snow tonight, tomorrow’s drive for many will be both ugly and difficult, due to ice on the overpasses and we live in an environment, that since snow isn’t the norm, many aren’t prepared for the freeze that comes with it.
Unlike homes in the northern areas, homes here weren’t designed for cold weather, so naturally the concern about pipes bursting is due to not being insulated or needing to be insulated from cold weather, icy patches on overpasses and driver’s not accustomed to driving in freezing/snowy situations.
Many of the schools have closed down and for those who can or are able to stay home or work from home, that is the alternative.
For us, snow will be a novelty, IF, it happens, though right now, it’s more of a cold chill and dark skies. So who knows what will happen after midnight?? Maybe we will get some snow….even if it’s just an inch.

That’s what we’ve been doing….surprisingly the forecast is calling out for snow, which for our area is beyond unusual and nothing like the blizzard that many are experiencing right now, but still, for our area, any snow is excitement.
So who knows..maybe we will see ice..maybe we will see just a lot of wind or maybe…just maybe…hoping..we can see some snow!
